Hunger is a global health crisis that affects millions, and it also provides a context for students to study proteins and their role in nutrition. We’ll show you how to use a Bradford assay to determine the protein content in store-bought drinks, and design a treatment proposal for protein-energy undernutrition (PEU). Students use their data to design a treatment that meets requirements and addresses constraints. Using simulated outcomes, they then test and revise their proposal to create a final plan that considers constraints, trade-offs, and social, environmental, and economic factors.
